Founded in 1994 and relocated to Cambridge near Hobart in 2003, Sullivans Cove has become one of Australia’s most celebrated whisky producers. Working on a small scale and producing only around 120 casks annually, the distillery has earned a global reputation for crafting exceptionally refined and characterful single malts. Its use of traditional Charentais stills and meticulous cask selection contributes to a style that is rich, elegant and unmistakably Tasmanian.
The American Oak Second-Fill expression beautifully showcases the distillery’s house character. Matured in casks that previously held Sullivans Cove single malt, these carefully selected barrels allow the spirit itself to take centre stage while adding subtle layers of complexity. Rich and vibrant, this whisky displays a harmonious balance of orchard fruits, tropical notes, gentle spice and refined oak, delivering both depth and freshness in equal measure.

Tasting Notes
Nose: Citrus peel, ripe red apple, quince, cherry, apple purée, banana custard, warm waffles and tiramisu.
Palate: Rich and textured with pineapple, kiwi, mandarin, stone fruits, pink bubble gum, toffee apple, tangerine, bay leaf, clove and black tea.
Finish: Long and lingering with peach, candied orange, mandarin, floral honey, soft confectionery notes and elegant oak.
