SULLIVANS COVE American Oak Second Fill Single Cask (TD0062)

Sullivans Cove, founded in 1994 with production beginning in 1995, moved to Cambridge near Hobart following its acquisition in 2003. With its traditional Charentais stills brought back into operation, the distillery has developed a distinctive single malt style known for its finesse, balance and expressive spirit character.

Unlike the standard American Oak Single Cask releases, this expression is matured in a second-fill American oak cask that had previously held an older batch of Sullivans Cove single malt. Originally commissioned as virgin oak casks in the mid-1990s, the casks were first filled with Sullivans Cove whisky, then decanted, re-charred and refilled. The softer oak influence allows the distillery’s spirit to take centre stage, resulting in a particularly complex and balanced whisky.

Cask TD0062 was distilled in November 2005 and decanted in April 2021 after 15 years of maturation in a single 300-litre American oak cask. Bottled at 47.5% ABV, with a limited yield of just 462 bottles, it delivers an elegant combination of tropical fruit, creamy sweetness, chocolate, spice and sherbet-like freshness.
