Tasting Notes
Nose : Caraway practically leaps out of the glass, captivating the palate. It displays spicy notes (pepper, clove, cumin) and empyreumatic touches (savory, absinthe, fennel). It evolves toward fresh green mint and coriander. The power it exhibits is unlike a typical liqueur.
Palate : Round and smooth. Contrary to the nose, the palate reveals a particularly liqueur-like quality. Many of the same aromas reappear, but here, the mint has become softer and the coriander has been replaced by linden and sage. Despite this, caraway remains dominant, and the spices retain their presence.
Finish : Long and mellow. Without losing intensity, the caraway is enveloped in a licorice- and anise-flavored liqueur. A hint of chlorophyll provides a refreshing balsamic burst. The retro-olfaction is long and verdant, and the empty glass is deeply marked by caraway and dried fruits (cashew, almond).
