Tasting Notes
Colour : Light gold.
Nose : Delicate, subtle. Fleur de sel and grains of sand initially cover the olfactory palette. It evolves gracefully with vegetal (beetroot, endive, artichoke) and exotic (passion fruit) notes. Increasingly marine (cuttlefish ink), mineral (slate), and smoky (Armenian paper), it continually gains in elegance.
Palate : Tonic, full-bodied. With great purity of expression, the flavor profile oscillates between fruity (nectarine, lychee), maritime (Guérande salt, oysters), and pastry (rum baba, peanut butter) notes. Aeration reveals flavors of mango.
Finish : Both airy and warm. Initially ashy, the tasting reconnects with the marine (cod back) and indulgent (canelés) markers that accompanied the tasting. Then, flavors of pecan and other rooty notes (ginger) create a perfect harmony.
