Tasting Notes
Colour : Light gold.
Nose : Dense, sharp. At first, the aromas of sea spray that waft through the atmosphere give the aromatic palette the qualities of a turbulent marine landscape. Then, ashy, medicinal (balm, bandage), oily (wood wax), and rocky (pebble) aromas highlight the strong personality of this Kilchoman.
Palate : Tense, warm. Imbued with noble spices (cardamom), the flavor profile is also particularly saline. It then gains roundness, becoming honeyed (acacia, heather) and infused (thyme) before wafts of smoke envelop the palate.
Finish : Clean, balanced. Following the empyreumatic (burnt wood) notes from the palate, the tasting continues to reveal flavors of toasted bread, cough syrup, and roasting (espresso). These flavors are intimately intertwined with even more indulgent notes of baked apple and tarte tatin.
