Tasting Notes
Colour : Green gold.
Nose : Fresh, complex. Sublime scents of linden, mint, and verbena add a lot of class to the initial nose. With aeration, the aromatic palette evolves towards malty, medicinal (benzoin, musk), and refined fruity (kiwi, green apple) notes. Gradually, particularly delicate traces of smoke accompany aromas of candied lemon, juicy pear, and pistachio. Also worth noting: a very pleasant herbal and saline bitterness.
Palate : Lively, elegant. A blend of vanilla, sage, and acacia honey, the mouthfeel is tenderly tannic (barley grain, white grape skin) and vegetal (cut hay, chlorophyll). Very green, the mid-palate oscillates between chartreuse and absinthe flavors. Aquatic, with hints of water lily, reed, bellflower, and sorrel, the finish takes us to the edge of a peaceful river.
Finish : Long, fresh. Delightfully vanilla and spicy (ginger, cinnamon), the start of the finish is marked by notes of tobacco and lemon balm. At the very end of the mouthfeel, malted barley grains mingle with green bananas and aromatic herbs (wild thyme, chervil). Airy and at the same time smooth, the retro-olfaction reveals flavors of green tea, anise, and artichoke heart. The empty glass is both malty, iridescent, minty, and praline.
