Tasting Notes
Colour : Deep old gold.
Nose : Rich, concentrated. Both salty and earthy, the first scent is heady (lily, hyacinth), animalistic (bacon), and malty. With aeration, powerful spices (black pepper, cloves, curry) permeate the aromatic palette. Gradually, beeswax and heather honey perfume the atmosphere.
Palate : Full, complex. The mouthfeel is medicinal, spicy (saffron, cardamom), oily (rapeseed, sunflower), rooty (gentian), and mineral (clay). Candied fruits (walnut, pineapple, pear), acacia honey, and aromatic herbs (verbena, sage) then counterbalance chocolatey and malty flavors.
Finish : Long, dense. Earthy and saline, the start of the finish is simultaneously vanilla and indulgent (frangipane). Close to peat, the aftertaste is camphorous, medicinal (arnica), and spicy (star anise). Flavors of samphire and artichoke hearts add a touch of smoothness to the taste palette.
