Tasting Notes
Colour : Burnished gold with copper tinges.
Nose : Rich, concentrated. The first nose is characterised by notes of wax and toffee, as well as being exotic (mango, yellow kiwi) and vanilla. Allowed to breathe, peach and apricot stone fragrances pair harmoniously with strong spices (ginger, clove). Aromas of precious wood (oak) and heady florals (honeysuckle) then gradually take over.
Palate : Lively yet well-balanced. Combining curry, lemon and raisin, little by little the attack becomes honeyed (lime blossom, pine), fruity (almond) and chocolatey. The herbaceous (nettle) and rich (fennel, celery) mid-palate is smooth. The end of the palate is dominated by flavours of juicy, almost candied white grapes, prune and toasted walnut.
Finish : Long, distinguished. The very energetic start of the finish reveals numerous aromatic plants (chervil, bay leaf, sorrel). The spicy end of the palate (cinnamon) wavers between flavours of prune flan and mocha coffee. The retro-nasal olfaction is at once liquoricey, fruity (wild peach, apricot, nectarine), roasted (coffee) and infused (red tea). The empty glass is sandy (boulbènes).
