With 70 years of family expertise in the development of fruit eaux-de-vie behind them, Sébastien and Céline CASTAN embarked on whiskey in 2010. Their project is to create a whiskey rooted in its terroir: they therefore use barley from the distillery and are limited to local wine barrels. It is also this search for authenticity that will lead them to keep their traveling still which, in the past, crisscrossed the region for the distillation of fruit. Made up of 4 copper vases and a small Stupfler rectification column, this still produces in one pass a light and elegant distillate with a concentration of 80% .VOL. Rather rare, the distillate is then reduced before setting in barrels, which, in line with the climate, causes a share of the angels of the order of 5%. Casked in February 2017,
