Clairin Sonson originates from the village of Cabaret, a commune located in the Arcahaie district northwest of Port-au-Prince.
The sugarcane, of the local Madame Meuze variety, is cultivated on 25 hectares, interspersed with banana plants and other fruit trees.
Once harvested, the sugarcane is pressed, and the juice is slowly reduced to create a syrup.
This syrup is then spontaneously fermented using natural yeasts. Distillation is carried out by Stephan Kalil Saoud using a pot still heated over an open flame. The resulting clairin is bottled without dilution.
