Created in 2008, Chichibu Japanese single malt whisky is already highly regarded among Japanese whisky enthusiasts and whisky connoisseurs worldwide. Entirely produced at the distillery—and, for some expressions, increasingly using local barley, peat and even Japanese oak casks—Chichibu is on its way to becoming the first truly 100% Japanese whisky, thanks to the vision and dedication of its founder, Ichiro Akuto. Fermented in vats made of mizunara (a highly esteemed variety of Japanese oak) and distilled in small stills, the resulting spirit displays remarkable maturity and complexity, even at a young age. Every year since 2018, the Chichibu distillery has created a blend dedicated to the City of Lights: Chichibu Paris Edition. Exploring the geography and urban identity of Paris and Tokyo, the 2025 vintage invites the taster to discover the emblematic districts of these two capitals: Montmartre and Asakusa; Le Marais and Harajuku; Les Champs-Élysées and Ginza. Six labels have been designed for this edition, illustrated in a pop and colourful graphic style as a tribute to Japanese kawaii culture. Inspired by postage stamps with their serrated edges, they evoke travel and the dialogue between the two urban worlds.

Chichibu Paris Edition 2025 is the result of a complex blend composed of four casks of new French oak, one Spanish oak cask that previously held sherry, three French oak casks that contained red Bordeaux wine, one American oak hogshead, six bourbon barrels and two bourbon barrels that previously held heavily peated whisky. The whiskies used in this cuvée range from five to fourteen years of age. Enriched by this deliberately eclectic cask selection, the aromatic and flavour profile is built upon a firm malty backbone that carries the whisky with ease throughout the tasting. Exceptionally well balanced, it confidently explores earthy, fruity, spicy, indulgent and infused dimensions, each expressed with impressive intensity.

Description

Colour: topaz.

Nose: rich and unctuous. Supported by a pleasant malty bitterness with earthy and spicy notes (cinnamon), the aromatic palette quickly opens onto tropical fruits (passion fruit, lychee), dark berries (grape, blackberry) and undergrowth nuances (dry leaves, porcini mushrooms). Subtle hints of prune add a noble and refined character.

Palate: clean and lively. Initially oily, robustly peaty, lemony and peppery, the flavour profile gradually evolves towards honeyed and waxy tones. Growing increasingly creamy, it becomes more indulgent (toasted bread, rusk), malty (barley porridge) and deliciously fruity (mirabelle plum, damson).

Finish: long and concentrated. Echoing the malty tones of both nose and palate, the finish is refreshed by notes of gentian, mint, eucalyptus and sage. Both exotic (passion fruit) and candied (prune), the retro-nasal impression slowly softens into touches of toffee and bourbon vanilla.
