This version is the third and final instalment in our journey. It bears the name of Ricky “Dirty Harry” Seeharack, who worked at the Caroni distillery for 20 years.
Distilled in 1996 and bottled 2021, this Caroni is a blend of 4 barrels fully matured in Trinidad, until the rum was put into a stainless-steel tank in October 2019. Bottled at cask strength, the share has exceeded 85% during the aging process.
Profile: Harmonious and complex
Nose: Smooth and deep. Vanilla, praline, mustard seed, gooseberry, caper and chestnut
Palate: Lively and concentrated. Herbaceous, candied citrus fruit, salted butter and lime
Finish: Long and dense. Medicinal, hyacinth, pear, blackcurrant, passion fruit and spice.
