Tasting Notes
Colour : Golden yellow.
Nose : Warm, the nose presents clear honey notes, accompanied by a beautiful minerality (sandstone). Aromas of caramelized fruits, baked apples, and poached pears enrich the olfactory palette. Pastry and buttery scents also appear, reminiscent of kouign-amann (a famous Breton pastry). Upon aeration, the whisky reveals lovely floral notes (mimosa).
Palate : Rich and oily, the palate stands out with a clear and mineral attack, quickly tempered by honey confectionery flavors. Resolutely pastry-like, the palate is like a tarte tatin sprinkled with mild spices (cinnamon, vanilla). Mid-palate, candied citrus fruits mingle with aromas of frangipane and Breton palet (butter). Notes of blond tobacco and toasted wood add an extra dimension to the palate.
Finish : The honey wine coats the palate for long minutes. The apple turns into prune, and then the spices lead us to a beautifully long finish. After a few minutes, only the chouchen lingers.
