Tasting Notes
Colour : Intense gold.
Nose : Rich and deep. Initially, a thin layer of soot and ash covers oven-baked apples. Then, the peat takes over. It oscillates between dry and oily sequences, providing a lot of contrasts to the aromatic palette. Gradually, the acridness of smoke and burning Havana scents appear. The “Yoichi style,” both powerful and concentrated, is then fully expressed.
Palate : Fine and complex. Different from the nose, the initial taste is very fruity (candied apple and pear). Then, rather diaphanous peat settles around the circumference of the taste palette. In the middle of the palate, aromatic plants (lemon balm, chervil), lettuce, and watercress testify to a magnificently herbaceous evolution. Gradually, walnuts and apples highlight the oily and juicy character of the finish.
Finish : Long and balanced. A few citrus zests (grapefruit, lemon) provide liveliness at the start of the finish. Very elongated, it also shows licorice and vanilla notes. The peat has become drier (twigs, straw). In the aftertaste, dried fruits (almond, hazelnut, date) and toasted bread flavors coexist particularly harmoniously. The empty glass is a subtle blend of ripe apple, peat, and cut hay.
