The current Willett distillery was built in 1936 by Thomson Willett, and the first barrel rolled into the warehouses on Saint Patrick’s Day in 1937. Closed in the 1980s, Willett was purchased in 1984 by Thomson’s granddaughter, Martha Willett, and her husband Even Kulsveen. The distillery reopened in 2012. Crafted from a mashbill composed of 72% corn, 13% rye, and 15% malted barley, this single barrel bourbon doesn’t hesitate to showcase fruity, chocolaty, spicy, or floral tones brimming with natural flavors.

Tasting Notes


Colour
: Deep old gold.

Nose : Fine, fresh. Lovely notes of orange, vanilla, ripe fruits (mirabelle, mango) are wrapped in dark chocolate and strong spices (black pepper, nutmeg, clove). This elegant introduction continues with hints of lime blossom and cedar.

Palate : Lively, dynamic. Striking, spicy (Espelette), the palate’s attack is softened by candied ginger. In the mid-palate, notes of vanilla pods, dark chocolate, and black fruits (blackberry, blackcurrant) are supported by a saline minerality (basalt).

Finish : Long, refined. Very streamlined, the start of the finish brings new fruits (pear, russet apple) while coconut milk gradually spreads. Balsamic (cedar, savory) and heady (honeysuckle), the aftertaste becomes rooty, apricot-like, and indulgent (zucchini fritter).
