Description
Nose: Delicate and fresh. Honeyed (acacia), candied (pear, mirabelle plum), dried (raisins), and touched with exotic notes (pineapple, banana), the aromatic profile is also marked by vanilla, coconut, and herbal notes (cut hay). With aeration, it reveals an abundance of infused aromatic herbs (sage, verbena, wild thyme). Very well balanced, it constantly shifts between malted barley and Banyuls wine.
Appearance: Old gold.
Palate: Smooth and refreshing. Crunchy (grape, pear) and slightly tangy (candied lemon), the flavour profile is particularly juicy. Supported by a pleasant bitterness, it eventually settles on the schist terraces of the C?te Vermeille. As the tasting unfolds, pineapple notes appear, echoing the initial nose.
Overall: Silky and harmonious. Extending the fruity, vanilla, and mineral dimensions of the nose and palate, it gradually reveals hints of aniseed and mint that bring just the right level of freshness to maintain balance. Radiant and expressive, the retro-olfaction recalls the vibrant, abundant atmosphere of harvest time.
