The Sanchez distillery is a small family-owned business that has been operating for over 150 years in Candelaria Yegolé, a village in the state of Oaxaca. For four generations, the Sanchez maestro mezcaleros have been succeeding each other from father to son to create exceptional quality artisanal mezcals. The Jabali agave is a wild agave that is very present in the “Sierra Sur” of the state of Oaxaca, where it takes up to 15 years to mature under dry weather conditions. Its fibers are used by some communities to make ropes, commonly called “Jabalinas”.
