Tasting Notes
Nose : Enchantingly fine and complex. Salt, pepper, citrus, and agave express themselves magnificently. Its depth highlights the organic cultivation of this mezcal. It becomes milky (coconut) and continuously gains in noble expression. Its complexity delays the moment of tasting.
Palate : Even more impressive. Each flavor is of extreme finesse and precision. One can only be humble in the face of such a spirit. Apricot pits, lime, crushed almonds, raspberries, and a suggestion of green Tarragona are all evoked in this extraordinary palate.
Finish : Intense, rich. It takes on a more vegetal and licorice-like tone. The agaves rest on a bed of straw and hay. Over time, the palate tightens around agave juice and citrus zest (lime). The retro-olfaction is incredibly smooth. The empty glass oscillates between plants and earth.
