Grown in the limestone soils of Mexico’s central plateau in the state of San Luis Potosí, Agave Salmiana “Green Giant” takes 8 years to mature. The region’s semi-arid climate and wild agave give way to bright flavors of crisp vegetation and citrus. The production process of our Machetazo Salmiana 38% Mezcal differs from the common cooking process as these piñas are cooked by steaming above the ground in ovens allowing the flavor to remain unsmoked. The sloped construction of the distillery floor ensures a constant flow as the liquid from the cooked agave flows by gravity.
