Description
Nose:
Fine and complex. Simultaneously medicinal, herbaceous, saline and iodised, the aromatic palette also reveals fruity notes (pear), vanilla and milky coconut accents. With aeration, an elegant peatiness settles into the olfactory space, releasing scents of heady flowers (violet, lily of the valley) and aromatic herbs (sage).
Appearance:
Pale gold.
Palate:
Clean and direct. The peat becomes oilier and more chocolatey, absorbing mineral salts along the way. A lovely lemon-and-vanilla sequence then brings pleasant freshness to the palate. This is followed by flavours of ash, soot, green olive and samphire.
Overall:
Long and assertive. A delicious invitation to savour an infusion of sage and anise, the finish remains remarkably fresh. Growing increasingly gourmand, it reveals flavours of flan, rice pudding and porridge. Mineral (slate) and herbaceous (cut hay), the retro-olfaction evokes the image of peat blocks drying on salty meadows.
