Tobala, meaning “the plant that grows in the shade” in the ancient Zapotec language, refers to a variety of maguey (another name for agave from the americana family) that thrives only in the most remote parts of the valleys.
Smaller than espadin agaves, it requires significantly more piñas to produce the same quantity of mezcal, but the quality is often far superior.
This special, very limited mezcal is characterized by heady notes of candied fruits, flowers, and spices.
Smooth and fruity, it boasts a long and elegant finish.
