Sourced from the orchards of the Domaine located in Hiautre, Gonneville-sur-Honfleur, La Blanche Bio is produced from over 20 historic varieties of cider apples.
This high-stem orchard, managed using organic farming since 2013, is a classic example of an orchard where cows and apple trees coexist.
Harvested directly from the ground over a period of more than two months, the apples were washed, sorted, and grated before being moderately pressed to extract no more than 650 liters of juice per ton of apples.
The apple must then fermented for a period of 4 months before being distilled twice in a pot still. Placed in a stainless steel tank after distillation, the eau de vie was gradually reduced to reach its balanced strength.
