Distilled in 2009 and matured for 15 years in a first-fill Oloroso sherry butt, this GlenAllachie showcases the depth and power that sherry cask maturation brings to the distillery’s rich, full-bodied spirit. Bottled at natural cask strength (65.6% ABV), it delivers concentrated notes of walnut, dark fruits, liquorice and warm spice, balanced by a lingering sweetness.
Founded in 1967, GlenAllachie spent decades supplying blends before its profile shifted dramatically under Billy Walker, whose tenure redefined the house style: robust, indulgent single malts shaped by exceptional cask selection, particularly sherry.
This release is under the Symington’s Choice range, the personal selection of Andrew Symington, founder of Signatory Vintage. The series highlights individual casks chosen for their clarity of character, balance and ability to express a distillery’s style at its most compelling.

Nose: Walnut, liquorice root, cherry, dark fruit compote, polished wood and sherry-soaked spices
Palate: Rich and powerful. Dark chocolate, dried figs, candied orange, tobacco leaf and warming spice, carried by a full, velvety texture
Finish: Long and concentrated, with lingering cocoa, sherry sweetness, toasted oak and a final touch of clove and cherry
