A revolution shook the whisky category in 2020: Waterford Distillery! Led by the renowned Mark Reynier, the project placed emphasis on barley, at the heart of the final flavor profile of a single malt, through an ambitious triptych of Terroir, Traceability, and Transparency. Inspired by the greatest winemakers and leveraging the incredible richness of the Irish terroir, coupled with elite and cutting-edge production methods, the distillery made waves with their Single Farm Origin range, praised by critics and enthusiasts alike. It expresses the complexity of a single terroir, a single farm, a single harvest… One place, one farm, all at once! This year, Mark Reynier and his team return with a series of three new Single Farms, just as refined, precise, and complex. This edition was distilled from barley grown and harvested in 2015 by Martin Foley on the Hook Head peninsula in the extreme south of County Wexford, known for its lighthouse and ever-changing climate. Strongly influenced by the clayey and loamy soil, as well as the salt-laden storms, sea fog, and ocean breezes, this expression reveals beautiful spicy notes (nutmeg, white pepper…) and mineral qualities that perfectly complement its malty and indulgent character.

Colour
: Straw

Nose : Mineral and indulgent. Citrus zest, bread crumbs, nutmeg, white pepper, caramel, milk chocolate, salted popcorn, oak, earthy, herbal, and farmyard notes.

Palate : Malty and spicy. Nutmeg, white pepper, salted butter caramel, licorice, ginger biscuit, spicy chocolate, and citrus.

Finish : Long and spicy. While dry, the finish leaves a very persistent oily and spicy character.

Profile : Malty and spicy.
