SULLIVANS COVE American Oak ex-Tawny Single cask (TD0199)

Unlike their core range American Oak Single Cask, which is aged in ex-bourbon barrels, this single cask whisky is matured in American oak casks previously used to mature Australian tawny port-style fortified wine. The result is a flavour profile combining aspects of both our French and American oak styles, with the caramel, vanilla and bright woodiness of American oak combining with the rich dried fruit and molasses character of fortified wine. American Oak ex-Tawny Single Cask TD0199 was distilled in June of 2007 and decanted in October of 2019 maturing at Twelve years, Four months, in a single, 200L American oak cask previously filled with Tawny (Australian style Port fortified wine), prior to being filled with new make, this barrel had served a long life in the Australian wine industry.

Built in 1994, production at Sullivans Cove did not really begin until 1995. Shortly after it was bought in 2003, it moved to Cambridge, a small town not far from Hobart. Since then, its Charente stills have been put back into action and it produces the equivalent of 120 casks per year. Resolutely modern, its single malt continues to gain in finesse and balance, as is demonstrated with this version, created using a combination of bourbon and port barrels.
