Tasting Notes
Colour : Deep orangey copper.
Nose : Rich, deep. Marvellously oxidative (brandied cherries, sherry vinegar, hot tar), exotic (mango, persimmon, passion fruit), nobly spicy (cardamom, clove, saffron, turmeric) and heady (iris, lily, sandalwood), the first nose reveals simply astounding brightness. Allowed to breathe, aromas of chocolate, toffee, malted barley and orange zest rival each other in intensity. Finally, dried fruit and nuts (walnut, almond, fig, date) colour the aroma palette in autumnal shades.
Palate : Full-bodied, dynamic. The magnificently lemony and vanilla attack is phenomenally elegant. Covered in a fine layer of salted butter caramel, it then becomes more and more sunny. The rich mid-palate evokes a succulent quince jelly. Red and black fruits (strawberry, red fruits, grape, cherry) then make an incredible appearance. The end of the palate moves into more exotic (mango, pineapple, banana) and more vegetal (Cypress tree, thuja) lands.
Finish : Long, subtle. At the start of the finish, cocoa powder, heather honey and candied ginger spread across the palate. Candied fruits (orange, apricot, mango, melon) then release creamy flavours into a stately after-taste. The retro-nasal olfaction returns firmly to cereal territory (barley), even taking us to a malting floor. Also expressive, the empty glass opens the doors to a cabinet-maker’s workshop (wax, walnut stain, varnish).
