Profile : the sophisticated initial nose evokes an Amontillado sherry (apricot, beeswax, almond, chocolate). Allowed to breathe, it becomes tarry and empyreumatic (cedar). The rich attack is heady (geranium), fruity (orange), luscious (bay leaf) and powdery (cocoa). The mid-palate is at once exotic and spicy (ylang-ylang). The finish reveals smoke rings from a powerful Havana cigar. Pulpy and rich (coffee éclair).
LONG POND 11 ans 2007 TECC
Produced through a slow fermentation during which dunder is added, Jamaican rums are extremely heavy and powerful. With a ester content of 1,500 to 1,600 grams per hectolitre of pure alcohol, this cuvée, christened STCE, is one of the many marks produced by the Long Pond distillery. Evoking an Amontillado sherry from start to finish, it is marvellously oxidative. In this exuberant register, the very pleasant reduction found on the nose is also a highlight of the tasting. Magnificent.
