Before moving into the production of whisky, the Everts couple initially worked in the world of beer. In 1996, they successfully set up the Sainte-Colombe Brewery. It would not be until 2010 that Henri would begin his first attempts at distillation with a travelling distiller. In 2015, he acquired a still designed by a Nantes manufacturer that had ceased production 50 years earlier (COYAC). The distillery took on the name of the neighbouring Neolithic site feautring a collection of megaliths weighing up to 40 tons which is said to have been built by fairies! The whisky selected for the Version Française range is a single cask with very particular properties. The must it uses, which is fermented with two strains of brewer’s yeast grown at the distillery, is a combination of 175 kilos of barley malt and 50 kilos of wheat malt. Aged in an ex-white wine cask and patiently reduced, the result is an incredibly sophisticated whisky.
Profile: rich, malty and well-balanced, La Roche Aux Fées 2016 offers a wide palette of citrus fruits and heady florals. Grains and damp soil recall the whisky’s resolutely artisanal origins (yeast grown on site, fruit still, slow reduction). The combination of barley malt and wheat malt enables the creation of a spirit full of character, glorified by the finish in a fresh ex-white wine cask.

Appearance : straw
Nose : rich and malty. We are immediately transported to a barley field just after the rain (Pétrichor). The nose also reveals aromas of candied citrus fruit and orange bonbons. Yellow florals (St John’s wort) and beeswax enrich the palette of flavours. After a few seconds, the whisky develops into yellow fleshy fruits (quince) accompanied by freshly malted grains, pepped up with a soft note of leather.
Palate : round and well-balanced. The whisky maintains excellent texture, attesting to its slow and careful reduction. Fruity aromas (peach, white grape) appear first, followed quickly by grains and barley malt. Next, caramelized, resinous notes and a hint of cocoa powder bring the palate richness and complexity.
Overall : a sensation of sweetness (over-ripe grape) coats the palate. The fruity aromas linger for a few seconds, before disappearing to allow the appearance of a selection of varying degrees of roasted malt. A few minutes later, the cocoa found on the palate reappears to mark the end of the tasting.
