Appearance : copper with pink glints.
Nose : fine, slender. On the first nose, notes of blue agave and coconut milk from the peaty distillate firmly underscore aromas of apricot, lime blossom honey and red fruit (strawberry, red currant) from the port. Allowed to breathe, an oily, salty and spicy (ginger, cinnamon) peat gradually fills the olfactory space. To further accentuate its domination, it reveals smoky and medicinal (iodine tincture) tones with magnificent elegance and stunning complexity.
Palate : lively, assertive. As on the nose, the peat and sherry rival each other in intensity. Notes of damp, salt-rich earth and exotic fruits (mango, guava) create a criss-cross that brings lots of rhythm to the attack. Next, dark chocolate, biscuit de Reims, heady florals (peony, purple lilac) and sweet spices (cinnamon, cumin) bring lots of smoothness to the mid-palate. The vegetal and liquorice end of the palate is filled with straw bales.
Overall : long, serene. Perfectly bringing out the purity of its distillate, the start of the finish is unctuous (crème fraiche) and fruity (blackcurrant, raspberry, apricot). Peat seeps into every note of the flavour palette with rare delicacy. On the retro-nasal olfaction, lavender honey and gentian bring lots of relief to increasingly malty flavours. From the empty glass escape enveloping aromas of wild strawberry, bitter orange and artichoke heart.
