Tasting Notes
Nose : Full-bodied, juicy. Very original, the first nose reveals notes of agave and brioche. Slightly earthy, it opens up to juicy pears, beeswax, and candied lemons. As it warms, it becomes increasingly spicy (pepper, nutmeg), aniseed, and honeyed (acacia honey). A delightful milk chocolate note emerges at just the right moment.
Palate : Lively, elegant. Ripe fruits (mirabelle plum, prune, yellow peach) bring freshness and creaminess to the attack. The mid-palate is enveloped by rich honeys (heather, lavender) before noble spices (cinnamon, ginger) take over. These are accompanied by notes of café au lait and gingerbread.
Finish : Long, silky. Indulgent, it invites us to enjoy a delicious milk tart. Some heady florals (peony, white lilac) and bold spices (clove, star anise) add energy to the aftertaste. On the retro-olfaction, fresh walnuts and dates coat the palate with their rich tannins. The empty glass evokes sugarcane, agave honey, and cannelés (French caramelized pastries).
