TASTING NOTE
Appearance : topaz
Nose : lively, powerful. The intensely malty first nose is also praline and apricoty. Allowed to breathe, it becomes floral (iris, lavender, violet) and hot (Espelette pepper). Gradually, aromas of walnut, bourbon vanilla and salted butter caramel bring lots of depth to the aroma palette. It then lingers on notes of tobacco, camphor, ripe fruits (pear, Mirabelle plum) and dried fruit and nuts (chestnut, date). Superb.
Palate : sharp, dynamic. On the attack, heady flavours of lavender honey appear alongside mineral notes of slate and more unctuous notes of malted barley. On the mid-palate, this dynamic opening develops fruity and even more honeyed registers (gooseberry, acacia, lemon, lime blossom). The end of the palate is chocolatey, softly spicy (cinnamon, ginger) and rich (vanilla flan).
Overall : long, well-balanced. At the start of the finish, citrus fruits (grapefruit, kumquat) release their tangy juices onto malted barley grains. The very end of the palette focuses on the flavour paletteÕs vanilla character. On the retro-nasal olfaction, cocoa powder spreads generously across the palate. The empty glass is spicy (nutmeg, clove), lemony, herbaceous (green barley) and delicately woody (virgin oak).
