Distilled during the summer of 2010, this whiskey from the Daftmill distillery is the latest expression from Optic barley. Although grown on their own land since the 1980s, this variety has gradually been pushed aside in favor of more indigenous barley. Once harvested, the barley is then malted, dried and transformed into “Grist” before being distilled and aged in oak barrels on site, that is to say in the very hangar of the farm. This is a blend of 25 first-fill barrels that previously contained bourbon. Only 6,250 bottles worldwide.
