Faubert Casimir continues the work initiated by his father Duncan in 1979. In Barradres, in Haiti, he cultivates 50 ha of white and red Hawaiian canes, tender non-hybrid canes. Each cane is only harvested when fully ripe. According to tradition, he adds lemongrass leaves, cinnamon and, for certain cuves, ginger to pure fermenting cane sugar. This Clairin oscillates wonderfully between classicism and unbridled exuberance.
