Like the Sauternes cask featured above, this Caol Ila is part of a trilogy of wine barrel-aged whiskies from Signatory Vintage.

Signatory Vintage is undoubtedly one of the more famous Independent Bottlers in the world, and their Un-Chillfiltered Collection is an exploration of whiskies that are neither chill-filtrated nor have additional colouring. 

This Caol Ila 9 year old was matured in Burgundy wine barrels.

Perfectly combining the power of peat and the finesse of Pinot noir, it is marked by red fruits, camphor and liquorice. 

More smoky than peaty, it is undeniably marine with lovely fruitiness.
