As well as reflecting its smoky, malted barley, Caol Ila is also oily and peaty, with marine and vegetable notes. Its recent official bottlings, which are particularly expressive, have an intense smoky and peaty character with a good balance of saltiness and sweetness. Superb versions of this single malt have also been released by independent bottlers Gordon MacPhail & Signatory Vintage. Caol Ilas stills, which are large and onion-shaped, have a strong influence on this single malt and give it a fairly light and delicate character.

Only 144 bottles were produced from a single hogshead of Caol Ila single malt Scotch whisky, which was aged for more than 35 years.
NOSE: Mild chorizo with a sprinkle of aged parmesan, followed by a smattering of sawdust shavings. A touch of smoke from a dying fire melds with the earthy fruitiness of apple skins. Crumbly barbecued pork rinds appear with a dusting of mild chili powder and blooming hyancinth petals.
PALATE: More apple, mixed in with roasted candied hazelnuts. Some syrupy sweetness is followed by crackled wood and the speckled crust of a wood-fired pizza. A few drops of Poire William intertwine with a slice of millionaire’s shortbread.
FINISH: An ashy, sophisticated smoke – like that of a light cigar – stays on with a wedge of lemon drizzle cake and a touch of burnt grass. A mouth-coating sensation remains with the refreshing creaminess of mint ice cream.
