Tasting Notes
Colour : Bright Gold.
Nose : Refined, distinguished. The remarkably delicate first nose is at once exotic (passion fruit), herbaceous (cut hay), mentholated, floral (lilac, lily of the valley), slightly camphoric, lush (barley field) and very subtly peated. Allowed to breathe, fragrances of peppermint, star anise, chocolate and gentian underscore the aroma palette’s beautiful vegetal development. Little by little, aromatic plants (tarragon, lovage, sorrel) covered in fleur de sel appear.
Palate : Full-bodied, delicate. The wonderfully exotic attack (lychee, kiwi, passion fruit) is also peaty, iodine, salty and refreshingly herbaceous (mint, verbena, sage). Like a rustic landscape by the sea (salt marsh, samphire), the mid-palate is characterised by absolutely delicious spinach and Brussels sprout flavours. The end of the palate features at once aniseed and lemon.
Finish : long, svelte. Staying close to the end of the palate, the start of the finish is lemony and mentholated. At the end of the finish, impressively present notes of dark chocolate, oily peat and bourbon vanilla flood the taste buds. Equipped with a very pleasant malty bitterness, the camphoric and tarry retro-nasal olfaction is accompanied by notes of pipe tobacco. The empty glass is saturated with intense smoke and oily aromas (cod liver, green olive).
