TASTING NOTE
Color: deep gold.
Nose: subtle, pulpy. Sublime scents of malted barley and a roaring fire on the verge of dying out dominate a first nose which is also greedy (vanilla), meaty and fruity (reinette apple). When aired, it becomes floral (daffodil, blueberry), mineral (slate), rustic and slightly medicinal. Some candied fruits (grapefruit, lemon) and acacia honey complete this aromatic picture dominated by the yellow color.
Palate: lively, firm. Both fruity (plum, pear), peppery and medicinal (balm), the attack on the palate is deeply herbaceous and malty. So much so that the mid-palate propels us right into the middle of a green barley field. Very pleasantly saline, the very end of the palate is also deliciously sweet (vanilla, pineapple, lavender honey) and spicy (cardamom).
Overall: long, tonic. Vegetal (fresh mint), the start of the finish is also heady (iris concrete), mineral (clay, limestone) and vinous (black grape), highlighting the beautiful influence of aging in sherry casks. In retro-olfaction, aromas of verbena, lavender and black fruits (blueberry, blackberry) permeate the ambient atmosphere. The empty glass is unmistakably malty, grassy and slightly meaty.
