TASTING NOTE
Color: old gold.
Nose: rich, concentrated. Four sequences provide a lot of relief and depth to the aromatic palette. 1st fruity sequence: mirabelle plum, plum, nectarine. 2nd gourmet sequence: rice pudding, semolina cake. 3rd spicy and medicinal sequence: cloves, cinnamon, saffron, balm, camphor. 4th vegetal and floral sequence: lilac, lily of the valley, malted barley, chervil. Over time, all these notes come together to form a remarkable aromatic maelstrom of richness and complexity.
Palate: ample, lively. Marvelous, the attack on the palate masterfully transcends the aromatic palette. Its very fine grain and chocolatey touch envelop the periphery of the palate with enormous softness. In the mid-palate, notes of mint, fresh fruit (plum, plum), curry, candy sugar, coconut milk, roasted pineapple and malted barley follow one another with a lot of zest. In the aftertaste, various herbal teas arrive at the right time to irrigate the taste buds.
Overall: long, fluffy. Continuing on from the nose and the palate, the start of the finish is at once heady, fresh, greedy and grainy. Lily flowers, alfalfa, figs, porridge, oat cakes, candied ginger and cocoa powder then form a panel of flavors whose nuances are matched only by the nobility of expression. Evocative, the retro-olfaction takes us to breathe the spray of the North Sea near the distillery. In turn greedy, the empty glass breathes breakfast pastries.
