TASTING NOTE
Appearance : mahogany with glints of topaz.
Nose : vinous and heady. The very delicately woody (oak, wax) initial nose also reveals very distinguished notes of malted barley, dried fruit (date, walnut) and spices (clove, cinnamon). Allowed to breathe, it becomes creamy and pastry-like (spice bread, Liège coffee, Paris-Brest). With lots of zest and energy, it becomes increasingly fruity (stewed apple, pear), almost exotic (mango).
Palate : clean, beautifully sculpted. Very much in the same style as the nose, the palate begins by highlighting a magnificent and very almond and vanilla wood. The fresh mid-palate takes us to the heart of a pine forest to breathe in the aromas of resin and moss. Then, with perfect timing, candied orange and Mirabelle plum launch an attack on the flavour palette. The end of the palate is spicy (cardamom, nutmeg). The sherry brings with it a pleasant saltiness.
Overall : long, very noble. The very roasted (pipe tobacco, coffee) start of the finish is also very exotic (persimmon, passion fruit) and powdery (cocoa bean). With time, a delicious fig jam unctuously coats the taste buds. On the retronasal olfaction, star anise, precious wood and heady florals (lavender, lilac) form an inspired triptych that brings elegance to the very end of the palate. The empty glass adds a very fine film of liquorice, dark chocolate and iris.
