Appearance : deep gold.
Nose : refined, smooth. The superbly malty initial nose is also very fruity (ripe apple, candied pear) and pastry-scented (cake, custard flan with prunes). Allowed to breathe, very fine notes of wood bring lots of nobility to the expression. Increasingly heady, it lingers with aromas of salted butter caramel, candied lemon, white mint and spices (ginger, cumin). With lots of finesse, the aromatic palette becomes delicious honeyed (acacia) and exotic (coconut) with time.
Palate : concentrated, rich. On the attack, beautiful vegetal (cut hay) and herbaceous flavours (tobacco, peppermint) are gradually enveloped by a fine layer of chocolate and liquorice. Then, on the mid-palate, the spices become stronger (clove, nutmeg). Bourbon vanilla and Corinthian raisin bring lots of creaminess to the end of the palate. Note that it has also moved closer to malted barley. Finally, as with the nose, acacia honey covers the taste buds.
Overall : long, rich. Continuing on perfectly from the palate, the start of the finish is floral (lily, iris), infused (sage, verbena) and roasted (coffee, mocha). Notes of toffee and tobacco then create a particularly harmonious duo. On the retro-nasal olfaction, aromas of undergrowth (mushroom, moss, lichen) and candied ginger bring out the very mature character of the very end of the palate. The empty glass is unmistakably medicinal (ointment, mustard poultice), malty and praline.
