TASTING NOTE
Appearance : yellow gold
Nose : the warm nose presents frank notes of honey, accompanied by lovely minerality (hail). Caramelized fruit, baked apple and poached pear enrich the aromatic palette. These are followed by fragrances of sweet pastry and butter not unlike the famous Breton pastry, the kouign-amann. Allowed to breathe, the whisky also reveals beautiful floral notes (mimosa).
Palate : the rich, oily palate stands out for its frank and mineral attack which is quickly tempered by flavours of honey confectionery. Resolutely pastry-like, the palate is like a tarte tatin sprinkled with sweet spices (cinnamon, vanilla). On the mid-palate, candied citrus fruits appear alongside flavours of frangipane and palets bretons (butter). Notes of blonde tobacco and toasted wood bring an additional dimension to the palate.
Overall : honey wine coats the palate for many long minutes. Apple melts into prune, and spices take us to a long finish. After a few minutes, only the chouchen remains.
