TASTING NOTE
Appearance : bright gold.
Nose : rich, concentrated. The very refined first nose is at once peaty, ashy, herbaceous (cut hay), spicy (clove, star anise) and mineral (limestone). Allowed to breathe, the aroma palette is dressed in exotic tones (passion fruit, pineapple), heady fragrances (iris, lily) and vanilla scents. It then becomes increasingly camphoric and candied (lemon, grapefruit).
Palate : elegant, balanced. The very milky attack (coconut, walnut) gives the floor to a fairly dry peat coated in soot and silt. The wonderfully fresh mid-palate is luscious (chlorophyll), liquorice (stick) and infused (black tea). The rich end of the palate invites us to savour a vanilla flan, rhubarb tart or strawberry cream cake. Everything is of course wrapped in a translucent smoke.
Overall : long, silky. Drawing out the end of the palate, the start of the finish is energized by lime juice and mint. Gradually, the peat becomes milky, fruity (pear, Mirabelle plum) and herbaceous (aniseed, fennel). On the retro-nasal olfaction, flavours of shellfish, iodine and kelp pair wonderfully with cocoa bean and salted butter caramel. The empty glass reproduces aromas of cooked agave, artichoke heart, straw and burnt earth after the harvest.
