The tireless professor’s imagination has continued to produce a stream of concoctions, such as a cold-distilled 91.2% ABV absinthe and a cask-aged gin. Created in a tribute to Ralph Dodd, its spiritual founder born 200 years ago, Dodd’s Gin features a floral, light personality characterised by stunning notes of juniper, cardamom and blackcurrant. Montelobos Joven is the result of one man’s vision and passion for mezcal, namely Ivan Saldana. Situated in Santiago Matatlan in the Oaxaca region, this distillery uses only the Espadin agave variety. This totally authentic and classic mezcal is very subtle and full of nuances; hints of earthy, almost peaty notes can also be detected. Its aromatic and lively palette is above all centred around the taster. From the onset, the initial nose sets the tone: lemony, salty and peppery. Then follows a delicate earthy note with delicious fragrances of agave. Spices become more pronounced (nutmeg, cloves). The palate is unmistakably earthy, almost peaty. A remarkably forthright mezcal that continues to intensify throughout the tasting experience.

The Guatemalan company, ‘Ilegal’ takes its name from the fact that it employed somewhat unconventional methods to import its first “artisanal” mezcals. At that time the best producers of artisanal mezcal did not have any official certification; it was therefore in theory illegal to export them. Hence the founders of Ilegal opted to import the mezcal on a clandestine basis. The company is now thankfully legal, and the Ilegal brand continues to select mezcals from traditional producers who have organic certification and whose mezcal has a unique aromatic profile: the notes of agave take precedence over the notes of smoke, rather than the other way around.

Produced entirely from Espadin agave grown in the Tlocolula region, Ilegal Mezcal is distilled twice in copper stills. This classic version, Joven, is bottled using traditional methods, and without being aged.

Produced in the La Alteña distillery located in the Arandas mountains near Jalisco, Tapatio is a 100% blue agave tequila. The distillery, owned by the Camarena family, was completely destroyed in 1910 during the Mexican revolution. In 1937, Don Felipe Camarena decided to rebuild it in the Highlands, 20 miles from its original location, renaming it La Alteña – the woman of the mountain. Invented by George Guy in 1921 with the help of his father Armand, Pontarlier-Anis uses the family recipe for Pontarlier absinthe, but without the absinthe plant! A unique beverage obtained exclusively through the distillation of green anise seeds and carefully selected plants. Rhum Caroni


This small batch release which was distilled in 2000 has distinct notes of macadamia nuts and spices, two of the main flavor characteristics running throughout Caroni’s rich and flavoursome rums.

Caroni is Rum’s first case of a closed distillery becoming famous, a kind of Port Ellen in Trinidad. With its own sugar plantation, it started producing in 1918 equipped with a quadruple column still and a small copper pot still, creating rich, heavy, spicy rums.
In 2001 the government took the decision to stop production of sugar cane in Trinidad, causing the distillery to close in 2002. In 2004, Luca Gargano visited the distillery and found hundreds of barrels from the seventies onwards in an abandoned hangar. He decided there and then to buy the entire stock, let the rum mature further and bottle the casks little by little.

In 1751, Severo Arango y Ferro arrived in Cartagena de Indias, a port city in Colombia, with the aim of developing trade there. A powerful man, he was rapidly given the name the “Dictador”.

In 1913, Don Angel Nùnèz decided to set up his business there and founded his distillery, Destileria Colombiana. He went on to produce and distribute his wines and spirits locally for 40 years. After his death, his family picked up where he left off. At the dawn of the 21st century, the distillery gained access to the Caribbean zone when it was merged with a larger group; this generated new markets for its rums.

Three generations from a family of enthusiasts have now handed down control of the Christian Drouin house, one of the greatest gems in the production of Calvados and in particular Calvados Pays d’Auge.

Established in 1991 on a former stud farm in Coudray-Rabut near Pont l´Evêque, the estate boasts an exceptional range. In possession of the best and most comprehensive collection of old vintage Calvados – the oldest dating back to 1939 – Christian Drouin is to Calvados what Gordon & MacPhail is to whisky – a temple! Its cellar masters have been awarded numerous prizes in recognition of their skills.
The brand introduced in 2016 in Singapore Le Gin, an elegant cider apple eau-de-vie from Normandy in which juniper berries, ginger, vanilla, lemon, cardamom, cinnamon, rose petals and almonds have been macerated.

Wine-growers in the French region of Saintonge for over two centuries, the Merlet family installed its first still in around 1850 in order to begin distilling and producing cognac.

Over generations, they have refined their craft and now produce unique eaux de vie that are characteristic of the Saintonge terroir. Everything, from the alchemy of the still’s copper to the oak of the barrels, comes together over time to allow their eaux de vie to blossom into harmonious cognacs. In the 1970s, the creation of the Cassis plantation represented the first step in the diversification of the local wine-making terroir. The birth of the Crème de Cassis of Saintonge Boisée led to the creation of a range of fruit crèmes that are today extremely well-known.

Del Maguey is a collection of fine, rare and 100% agave mezcals distilled by families in the State of Oaxaca.

Each mezcal carries the name of the village in which it is produced. The “palanquero” warms hot stones in a hole dug in the ground, then prepares the hearts of agave which are placed inside and roasted over the heat for a several days. They are then ground in a stone mill in order to collect the mash which ferments naturally. Distillation is carried out in wood-fired clay or copper stills. Del Maguey can lay claim to over 400 years of tradition. All of its products are certified “organic”.

La Maison du Whisky x The Library is a temporary pop-up, a partnership between two long-term and complementary partners. Discover this new space located at 47 Keong Saik Rd. The design sets you in the atmosphere of a refined whisky shop: wood, leather, and these intriguing bottles… But it also exudes the quirky atmosphere of a “Cabinet de Curiosités”, a curiosity cabinet, these places which appeared in Europe during Renaissance (14th-17th century), and gathering works of art, natural history, ethnography… The design has been created by the French artist Albane Simon, who envisioned these artworks to stage and image the experience of whisky tasting, to transcribe the feelings and emotions with her own language, full of surrealism.

02/04/15 Our selection of agricole white rums
Less than 10 years ago, you would not make me drink a single drop of agricole white rum. But I have since crossed paths with Luca Gargano and his friend, the distiller Gianni Capovilla, who showed me Rhum Rhum PMG 56%, now one of my favorite spirits. It is a delicacy with a remarkable power and aromatic precision. This agricole pot still rum uses only (undiluted) pure cane juice by the Bielle distillery.

Is it an influence of the isolation of these distilleries spread north, east, west and south of Speyside? One thing is certain: the names of these distilleries sound differently in my mind. Inaccessible, wildest, most iconic... I can admit this is totally subjective! In my opinion, “Highland is beautiful”, and so are the five single malts from my selection. As for the very complex Glendronach, regarded as a Speyside by some, and a Highland for others, it is certainly part of my Top 5.

This expression is solely made out of a special grape variety called Folle Blanche, the most famous variety in Armagnac. This type of grape adapts itself perfectly to the local Terroir, the soil of Bas-Armagnac being mostly composed of sand and clay. The type of wine produced is particularly acid, ideal for the distillation. Classical, this 15yo XO reveals a lot of complexity and firmness.
